I made the cake during Joe’s birthday and it was huge success and the kid’s loves the taste and texture of the cake. I don’t have the step by step photos to show off but the recipe is very easy to follow. I will be posting the recipe at my other blog so if you’re interested you can grab it there. I was not able to bake the pandan chiffon yet, maybe on Dylan’s birthday. Anyway, I will not make this entry any longer. Have a great and safe night guys.

I am a reluctant shopper! I used to love and enjoy shopping a lot but not anymore. I shop things when I have time and only if I need something. Life is tough and I cannot afford to be tempted and spend for something that is not necessary. I am not being hypocrite pretending not to like shopping and if I have some of the money in the world then probably I will indulge sometimes and even buy stuffs that I can leave without.

Right now every penny we have is important and shopping for the holiday is the last thing in my mind. I just hope Santa will drop by on Christmas Eve. The kid’s have been good and they deserve something cool and neat. Will just wait and see.

Hubby job interview in Alabama is next week and his very tense but at the same time excited. I pray and hope that he will do well in the interview and hopefully will get the job. If he will be accepted then probably early next year we will be moving to Alabama. I burned myself while cooking the turkey potpie. It hurts like hell that I cast all my spells “bwahahha”. We still have leftover turkey and everyone is tired eating turkey sandwiches. Job Interview

The kid’s are now enjoying their vacation. We’re supposed to drive to Franklin, North Carolina to celebrate Thanksgiving with my in-laws but we’ve decided to stay home instead to give the old folks a break. Mom is keeps on calling us checking if we change our minds “hehehhee“. I love to spend the holiday with them but I prefer to stay home because the kid’s have colds and we can’t afford to waste more money for gas. It sucks but money is tight right now. Hopefully hubby will pass the job interview on the 3rd of December. Wish him luck guys.

Daddy's Birthday

I know it’s pretty late to post these photos but promised is a promised. We’ve celebrated Joe’s birthday not long time ago. It was not a huge event but we had fun and enjoyed every moment of it. I’ve cooked almost all his favorites and baked him a cool cake. We had Filipino, Japanese and Korean dishes on the table. I guess you can all guess what we had for dinner. Hey guys, what’s up? Thanksgiving (USA) is coming soon and probably you’re all busy preparing for the big day. I went to at least two grocery stores yesterday and still I can’t find everything that I need for our Thanksgiving dinner. I am not planning to cook a big meal because nobody’s coming to celebrate with us. We used to celebrate the event with my in-laws and with the girls but not this time to give mom and dad a break. Hey guys, what’s up? It’s been awhile since I posted something new on this blog. I have been lazy, bored, worried and still depressed. Life is not treating me good right now. Hubby is still determined to go back to the army. Honestly, I don’t want him to go but there’s nothing I can do for right now. The whole family is against of his decision. I don’t know what will happen next but I am hoping some miracle will come very soon. I don’t want to spend Christmas, New Year and all other holiday’s and occasions without him. Another Sick Child

Last Monday the school nurse called because my youngest son was throwing up and running a temperature. The poor boy was so sick that he thrown up all day long. But thank God he felt better the next day and was able to go back to school last Wednesday.

But my happiness was short live because another call from the school nurse yesterday and my eldest son was complaining of a sore throat and running a high temperature. My goodness! I hate when they get sick like this…it’s driving me nuts, the weather has been so cold and now it’s warming again. The cold and warm weather are making us all very sick. I just hope that my eldest will get better soon and not miss his school fall festival soon.

Pandan Custard Chiffon Cake

I have made a custard chiffon cake three days ago for the boys and they’re all crazy about it. I am now planning to make another batch but I am thinking on using a Pandan extract for flavoring this time. I never done it before but I am ready to take the risk. I love pandan flavor and I am hoping the kid’s will like it too.

Pandan extract or essence is a delightful scent that’s used throughout South East Asia. It is often soaked in water and boiled to extract the green color, a natural food colorant, as well as the aroma which a bit nutty. Often used to flavored the rice or create various desserts and custard.

Anyway, I have some Halloween and birthday photos to upload tomorrow. Hopefully, I will have a chance to upload some of the photos here. I will post a photo of my custard chiffon cake and tell me what you think about it. The recipe I’ve used was very easy to follow and anyone is welcome to ask, just drop me a line.

Barack Obama

Obama is now the President of the United States of America! I have nothing much to say but I hope this country will prosper and the economy will get better. I've talked to some of my relatives and friends back home and majority of them are with Obama. I can definitely understand why and I am not against of anything. I just want a better president who can rule this country with sincerity and dignity. I am just glad that the election is over and everyone will have now a chance to start over for a better life.

Anyway, we have received a call from the Kent, Washington yesterday and our chance on moving is pretty high. I don’t know when exactly but it should be around Christmas or first week of January next year. Will just wait and see what will happen next.

I am just hoping that he will find a job soon before our saving will runs out , so we can still pay and able to live in this house for a long time. Hey guys, what’s up? We are all watching the results for the Presidential right now. Everyone I knew is glued on their radio and television except me (glued to my PC). I was chatting with my family and friends in the Philippines and them too are watching the same thing. I guess everyone is now waiting for the final results. Joe's Birthday

Joe’s Birthday was a blast! We don’t have any visitors but it never stopped us from having fun. I’ve cooked most of his favorite food and baked 2 kinds of cakes.
